Roasted Cauliflower with Lemon, Onion & Capers

But a reminder- feel free to get creative and make this recipe your own! If capers aren’t your thing, try swapping them for tomatoes or olives instead. Or, switch it up entirely and experiment with a new seasoning for your cauliflower—my assistant Annie swears by adding nutritional yeast and turmeric. INGREDIENTS:
1 head cauliflower, cut into florets
Olive or avocado oil
Zest of 1 lemon
1 lemon, thinly sliced
1 onion or shallot, thinly sliced
2 tbsp capers

DIRECTIONS:
Preheat oven to 400°F. Line a sheet tray with parchment paper.

Toss cauliflower florets with olive oil, lemon zest, lemon slices, and onion/shallot.

Roast for 15 minutes, remove and add capers and return to the oven.

Roast for 10-15 minutes more or until cauliflower is golden with crispy edges!

Remove from oven, let cool slightly and enjoy!
