Sesame Sweet Potatoes
Sweet potatoes are a staple in so many kitchens, but have you ever tried them with tahini and sesame? This combination takes them to the next level! The nutty richness of tahini, the toasty crunch of sesame seeds, and the natural caramelized sweetness of roasted sweet potatoes come together in a dish that’s both comforting and exciting. It’s the kind of recipe that feels gourmet while being incredibly simple to prepare. We have been making it for clients and eating it like CANDY in our kitchen. Trust me, once you try it, you’ll want to make it again and again.
INGREDIENTS:
4 large sweet potatoes, cut into wedges
¼ cup tahini
¼ cup water
½ cup sesame seeds (white, black, or a mix!)
Extra virgin olive oil
Salt, to taste
DIRECTIONS:
Preheat oven to 450°F. Line a baking sheet with parchment.
In a bowl, whisk together ¼ cup tahini and ¼ cup water until smooth. It should be a little thicker the consistency of heavy cream, but not too liquidy that it doesn’t stick to the sweet potato. In a separate shallow dish, spread out ½ cup sesame seeds.
Dip one side of each sweet potato wedge into the tahini mix, then dip in sesame seeds.
Arrange on the baking sheet, drizzle with olive oil, (an evo spay works great here!) and sprinkle with salt. Roast for 30-35 minutes, or until golden and crispy. It should get nicely caramelized on the bottom!
Serve hot & enjoy!
**You can up the sweet potato quantity if you’re making for multiple people! I would say each sweet potato makes about 8 wedges
** if you have extra tahini from dipping leftover, mix it with some lemon juice and salt to make a tahini dipping sauce. (yum)
