White Bean Toast
Beans on toast anyone? I was recently told this was a weird thing to eat, but I love it! The first time I had a cannellini bean toast was when I was studying abroad in Florence, when I returned I would make it all the time to bring myself back.
White bean toast is one of my favorite low effort foods that can be a snack or a full meal if you pair it with some soup or a salad. So easy to make with very few ingredients (which you likely have in your pantry), and it’s very cozy - perfect for this time of year. I hope you try it and enjoy!
INGREDIENTS:
2 15-oz cans of cannellini beans
2 tablespoons olive oil
4 cloves of garlic, thinly sliced
1/4 teaspoon red pepper flakes
zest of 1/2 lemon
salt and pepper
shaved parmesan
DIRECTIONS:
Rinse and drain the cannellini beans and set aside.
Heat the oil in a pan on medium heat and begin cooking the garlic, red pepper flakes, and lemon zest until fragrant.
Add the cannellini beans, season with salt and pepper, and add about 1/4 cup water and cook until beans are creamy.
Spoon the beans over toast, drizzle with olive oil, and top with shaved parmesan + more black pepper if you wish.
