Breakfast banana muffins
These muffins came together when I was cleaning out my freezer and found some frozen bananas in there. I hate wasting food so whenever I notice the bananas in my fruit bowl are going brown and I won’t have enough time to make something with them, I quickly peel and freeze them! I love a muffin for those mornings I am running out of the house and want to have something on my stomach. These can be made with or without any added sugar. Add some chocolate chips for an extra treat!
Another thing I love about this recipe (and a lot of my baking recipes), is that it comes together in one bowl. One less dirty dish is a win for me.

INGREDIENTS:
3 ripened bananas
1/4 cup apple sauce or 1 egg
1 teaspoon vanilla
1/4 cup oil (avocado is my go to, I’ve also used olive oil or melted butter)
1/2 cup milk (you can use non-dairy milk)
1/4 cup brown sugar or granulated sugar, optional (if you skip the sugar they will still be tasty, just less sweet)
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 cardamom (optional)
1 teaspoon baking powder
1 teaspoon baking soda
1 cup oats
1 cup flour
1/2 cup chocolate chips, optional
DIRECTIONS:
Preheat your oven to 350 degrees and prepare the muffins tin - I use silicone muffin liners because they are so easy to clean!
In a large bowl, mix together the 3 ripened bananas (if you are using frozen, make sure to thaw them so they’re soft), 1/4 cup apple sauce or 1 egg, 1 teaspoon vanilla, 1/4 cup oil, 1/2 cup milk, and 1/4 cup brown sugar or other sweetener If using.
Once mixed together, add the 1/2 teaspoon salt, 1 teaspoon cinnamon, 1/2 teaspoon cardamom if using, 1 teaspoon baking powder, and 1 teaspoon baking soda. Stir in the 1 cup of oats, and 1/2 cup chocolate chips if using. Then mix in the 1 cup of flour and stir until mixed together.
Fill the muffin liners about 3/4 of the way and bake for 20-25 minutes! If you decided to make this into a loaf, bake for 40 minutes to an hour or until a toothpick comes out clean.
Serve with some butter and/or jam and enjoy.
