Classic Caesar salad

Classic Caesar salad is one of my favorite things to eat. I never get tired of it. I think having a solid recipe for a classic Caesar is great to have in your back pocket and you can always adjust to your personal taste - more anchovies (or none at all), more lemon or garlic.

What’s great about this recipe is you can whisk it together by hand or make it in the blender or food processor, or even use an immersion blender.

INGREDIENTS:
Crusty bread for croutons - baguette, sourdough, or ciabatta, if making croutons
Romaine lettuce
1/4 cup olive oil
1 egg yolk
1 lemon
1 teaspoon Dijon mustard
1 garlic clove, minced or grated
About 5 anchovies, chopped (omit if you’re not into them, add more if you are)
1 teaspoon Worcestershire sauce
Salt and pepper
Parmesan cheese, about 1/4 cup grated, plus more for serving (also optional)
Crusty bread for croutons - baguette, sourdough, or ciabatta

DIRECTIONS:
If making croutons preheat your oven to 400 degrees. Cut up the bread into roughly one inch cubes and place on the sheet pan. Drizzle with about 2 tablespoons of olive oil and season with salt and pepper.

To make the dressing by hand, place an egg yolk in a bowl and slowly whisk in the 1/4 cup of olive oil until the mixture thickens up. If it doesn’t start thickening up, add the juice of 1/2 lemon and 1 teaspoon of dijon mustard, mix together and continue slowly adding olive oil. Once thickened, add the grated garlic clove, chopped anchovies, 1 teaspoon Worcestershire sauce, salt and pepper to taste, and the 1/4 cup parmesan cheese. Taste and adjust seasoning adding more, salt of lemon if needed.

If making the dressing using a blender you can add all of the ingredients except for the olive oil and then slowly add the olive oil ad you blend. Make sure to taste and adjust seasoning as needed.

Top your salad with dressing, croutons, more parmesan (grated or shaved), more lemon (if you’re me), and some cracked pepper.

*Dressing will be the best for the first couple of days, and will last in the fridge for about 5-7 days.
